Vegetable Tagine with Swiss Chards

Chard, also known as Swiss chard, is a member of the beet family and has a crunchy stalks and spinach-like leaves. The earthy flavour isn’t to everybody’s taste but this tagine offers a delicious blend of onions, chard, herbs and spices thickened by rice.

Serves 6 people

4 bunches of Swiss chard, leaves and stalks finely chopped
2 medium onions, chopped
40 g (1 ½ oz) uncooked rice
6 tablespoons freshly-chopped coriander
4 tablespoons vegetable oil
1 teaspoon sweet paprika
salt and pepper to taste

Heat the oil in a large casserole and sauté the chopped onions. Stir in the spices, herbs, chard, salt, pepper and 4 tablespoons water and cook, covered, for 30 minutes. Add the rice and continue cooking for 20 minutes – until the liquid has evaporated and the rice has effectively cooked. Make sure you stir from time to time and add water whenever necessary so the rice doesn’t burn. Serve hot.
