Lamb tagine is the king of stews in the Moroccan kitchen – a marvelous, slowly-simmered stew where the meat falls off the bone and the sauce is intoxicatingly fragrant. At the base is the classic lamb tagine with lemons and olives, spicy with a perfect blending of many flavours. Add absolutely fresh vegetables, such as carrots, celery, artichokes, cardoons and truffles, to make the other fragrant lamb tagines.

Next are lamb tagines with fruits. You can add a variety of fruits to the pot to make a delicious tagine: apricots, apples, prunes, dates and quinces just to name a few.
